Yields: 6 Servings
Ingredients
1/2 Savoy cabbage, shredded
2 Stalks celery, julienned
2 Granny Smith apples,
2 Green onion, sliced
2 teaspoons Cumin seed
1 tablespoon Dijon mustard
2 tablespoons Red wine vinegar
1/2 cup Olive oil
1/3 pound Each: sliced smoked turkey,
1/2 cup Olives
Instructions
Mix cabbage, celery, apples, green onions and cumin seeds together in large bowl. Whisk together mustard, vinegar and oil. Toss with cabbage mixture, cover and refrigerate for at least 1 hour. Cut the sliced meats and cheese into strips. To serve, toss cabbage mixture again and place on large platter. Arrange sliced meats and cheese on top, garnish with olives. Yield: 6 servings
